Almond Flour Peach Cobbler- Summer Series

Since peaches are ready available in Texas we tend to stock up on these juicy Texas peaches. We make grilled peach salad, peach ice cream but our favorite is a good peach cobbler. Since we have been following a gluten free diet for some time now, I explored with an almond flour and the cobbler was delectable!

The best part it was kid approved! πŸ™Œ

Once it gets the seal of approval from your kids, you know it’s a keeper.

The recipe is so simple.

To make the peaches you will need:

  • 2-3 large peaches peeled and sliced

  • 1/2 cup of sugar (Splenda is a good option)

  • 1 juice of a lemon

  • In a saucepan, bring to a boil.

    Peaches have to be soft. They tend to change color at the 5-8 minute mark and that’s how you know they are ready.

For the Almond Flour Mixture:

You will need:

First melt 1 stick of butter and air to the bottom of the baking dish.

  • 1/2 cups of almond flour

  • 1 cup of sugar or splenda

  • 1/2 cup of almond milk

  • dash of salt

Mix and add to baking dish. Do not stir

Add Peaches mix. Do not stir

Top off with Cinnamon.

Bake at 350F for 40-45 minutes. Enjoy!
