Easy Chicken Pozole
Chicken Pozole is a delicious soup typically made during the Holidays! It’s a long process to make Pozole but I found a way to make it in under an hour. My kids love it so much that we have it on the dinner rotation at least three times a month.
To make Chicken Pozole, You will need the following:
1 Large can of Homily
6-8 pre cooked chicken breasts shredded (a de-boned rotisserie works too)
2 low sodium chicken broth
a pinch of chili powder
a pinch of cumin
a pinch of salt
pinch of oregano
2 garlic head
2 large onion chopped and grilled (I do this while I am grilling the chicken breasts)
3 poblano peppers (washed, without seeds and grilled) this will be used as your base blend them with 1/2 cup of of water.
Water
pinch of chicken bullion
Thats it!! Since everything is already pre cooked, add everything, except homily to a pot. Cook at low heat for 20 minutes, after 20 minutes add Homily and cook for additional 20 minutes. Garnish with cabbage and radishes and enjoy with tostadas.
